This recipe can also be made with roast chuck and roast sirloin. The amount required is increased to allow for fat. Once roasted, dice/shred roast meat in place of ground meat.

Chuck or Sirloin

2 Tbsolive oil

2Sweet Onion

1garlic bulb

2 x 15 ozcan of Whole Tomatoes

4 x 32 ozBeef Broth

4 Tbstomato paste

1 Tbssalt

1 tspground white pepper

2 Tbschili powder

2 Tbsground cumin

0.5 Tspcayenne pepper

2 cupsfrozen corn
Fresh roasted corn if available
Instructions
Step 1
Rinse beans. Soak beans overnight to shorten cooking time. Cook beans until almost tender.
Step 2
Brown ground round, chuck, or sirloin. When done, sprinkle with flour, and stir well until the flour disappears.
Step 3
Add onion. Cook until onion semi - transparent. Add garlic, cook for 1 min.
Step 4
Add hand-shredded whole tomatoes. Add the remaining juice.
Step 5
Add tomato paste, salt, pepper, chili powder, cumin, and chipotle chili powder. Stir well.
Step 6
Add beef broth. Simmer until broth reduces by half.
Step 7
Add frozen corn. Fresh roasted corn if available. Cook an additional 30 minutes.
