Step 1
Mix together garlic, mayo, lemon juice, 2 tbsps of the olive oil, parsley, and chives to make the aioli, and set aside.
Step 2
In a pan, melt the butter, and sear the steak on each side, to your liking, but medium rare is best.
Step 3
Dress the arugula in a bowl with balsamic and remaining oil.
Step 4
In a pan, slow cook the onions with butter until they develop a deep golden colour.
Step 5
To each slice of freshly toasted sourdough, evenly spread the aioli on each slice, then top with arugula, steak, and onions.
