Ingredients
3 servings

2 BulbsGarlic
minced

1onion
chopped

1potato
chopped

1 Tbspolive oil

2 Tbspbutter

salt
to taste

pepper
to taste

1 TbspThyme
add a little at a time to taste and add more if needed

1 TbspParsley
add a little at a time to taste and add more if needed

1 cupwhite wine

3 litresstock
I used chicken

2 cupsbread
cubed

½ cupcheese
Grated, I used gouda

2 cupchicken
cooked, rotisserie
Instructions
Step 1
In separate bowls, mince the garlic, chop the onion and chop the potato



Step 2
In a medium sized pot, put on medium heat and pre-heat the oven to 400 degrees fahrenheit
Step 3
Add olive oil and butter to the pot until melted


Step 4
Cook the onion until translucent

Step 5
Once onions are done, add the potatoes and garlic


Step 6
Add the white wine, stock, chicken and spices







Step 7
Bring pot to a boil then simmer for 20 minutes
Step 8
Cut bread into cubes, toss in olive oil and salt



Step 9
On a baking sheet, spread out the cubed bread and put into oven until golden
Step 10
Shred cheese

Step 11
In a personal oven safe bowl, add the following mixture: soup, cubed bread and cheese. Then put in the oven on broil until melted. (If you dont have personal oven-safe bowls, melt cheese on cubed bread in oven and top onto soup)
