Baked Salmon & Green Beans

Instructions

Prep

Step 1
Preheat oven to 425°F and line a small baking tray with tin foil.
Step 2
Snap stemmed ends of green beans and rinse.

Bake the Salmon

Step 3
Place 4 salmon fillets onto the lined baking tray. Drizzle 1 tbsp olive oil over each fillet and season with pinch of salt and pepper. Mix the oil and seasoning evenly around the fillets. Ensure the fillets are skin-side down. Place the sliced lemons over the fillets and around the pan. Note: wash hands after handling raw salmon. Bake in the oven 6-8 minutes, until salmon is light pink/orange throughout.

Cook the Beans

Step 4
While salmon is cooking off in oven, it’s time to prepare the green beans. Add 1 cup of water into a microwave safe bowl and add the green beans. Cover the bowl with cling film and microwave full power for 4-5 minutes, until the beans are soft but still have a slight bite. Once the beans have cooked, add 2 tbsp butter and 1/2 tsp garlic salt. Mix to evenly coat.

Serve

Step 5
Create a small bed of green beans in the center of the plate. Place a salmon fillet on top with a lemon wedge on the side.
