2yolks
2 tablespoonsred wine vinegar
2cloves garlic
3anchovies packed in oil
1 teaspoondijon mustard
5 tablespoonsparmesan
freshly grated
1 tablespoonfreshly squeezed lemon juice
½ cupsextra-virgin olive oil
2romaine hearts
chopped
kosher salt
ground black pepper

Step 1
To make the croutons, melt the butter and olive oil in a small saucepan over medium-low heat. When the butter has melted completely, add the garlic and 1/4 teaspoon kosher salt. To combine, carefully swirl the pan. Allow the garlic to infuse the oil mixture for 10 minutes.
Step 2
.Place the bread on a baking sheet. Pour the garlic mixture evenly over the bread and toss to coat. Bake the bread in a single layer for 8 to 10 minutes, or until golden brown. To ensure even browning, stir the bread halfway through cooking. Remove from the oven and top with black pepper and Parmesan cheese. Cool for a few minutes and add to yuor favorite dish

Step 3
Finely chop the anchovies and garlic, then mash them to a paste with a large spoon. set aside
Step 4
In a large mixing bowl, whisk together the egg yolk, Dijon mustard, and a splash of red vinegar. While whisking, drizzle in the olive oil in a steady stream until the mixture is emulsified.
Step 5
Combine the anchovies and garlic in a mixing bowl. 3 tablespoons grated Parmesan and 3 tablespoons lemon juice, If necessary thin the dressing with 1 teaspoon of water at a time. Season to taste with salt and pepper.
Step 6
Reserve some dressing and croutons to top the salad.
Step 7
Toss the lettuce and croutons with the dressing in a large mixing bowl until evenly coated. Serve immediately, topped with more dressing, croutons and grated Parmesan.
