Instructions

Step 1
Char-fry cauliflower. Fry onions and garlic together, add curry paste and stir, add in chicken stock and coconut and simmer a while. Add frozen vegetables and heat through and serve with coriander and cashews. Don’t over-cook the cauliflower. Once frozen veg has heated through turn the heat off.
Step 2
Serve with rice. Top with coriander and roasted cashews.
