Instructions
Step 1
Set oven to 350. Sift flour, baking soda, salt, baking powder and cinnamon in a bowl
Step 2
Combine eggs, oil, sugar, zucchini, vanilla, lemon extract in another bowl -beat thoroughly
Step 3
Stir flour mixture into egg mixture until smooth
Step 4
Optional: add raisins, nuts, seeds, or chocolate chips
Step 5
Pour entire mixture into two greased bread/loaf pan (9 x 5 in) or muffin tins 2/3 full, or pour half or pour half into Bundt pan
Step 6
Bake 40 minutes for loaves, 20 minutes if muffins. They are done when toothpick pulls clean or center springs back when they are lightly touched
