Spicy Potato Pancakes

Created a spicy version of the viral cheesy potato pancakes! Coated in a sweet and spicy sauce, I can't get enough! You get to pick your choice of hot sauce whether that be Chin-Su hot sauce (my current to-go hot sauce), gochujang, buffalo sauce or even Tabasco, the choice is yours!

Instructions

Step 1
begin by boiling the potatoes until they are tender enough to be pierced with a fork.
Step 2
drain the potatoes and proceed to mash them in a bowl.
Step 3
season the mashed potatoes with garlic powder, onion powder, and salt.
Step 4
mix 2 tablespoons of potato starch into the mix, forming a cohesive dough. you may also use cornstarch.
Step 5
to assemble the potato pancake, wrap the potato dough around a cube of mozzarella cheese, ensuring there are no gaps.
Step 6
gently shape the pancake into a patty.
Step 7
lightly coat the potato pancakes in potato starch.
Step 8
in a pan over medium low heat, shallow fry the potato pancakes until they are golden brown, 3-4 minutes per side. set the pancakes aside.
Step 9
to make the sauce, melt butter and saute minced garlic until fragrant. add your choice of hot sauce and honey.
Step 10
allow the sauce to simmer over gentle heat for 3 minutes.
Step 11
place the freshly fried potato pancakes into the sauce.
Step 12
generously coat the potato pancakes in the sauce.
Step 13
remove the potato pancakes from the sauce and enjoy!
