Instructions

Step 1
Begin with finely chopping the onions and garlic.
Step 2
Get a large pan on a high heat and add 2 tbsp olive oil. Add the mince, cook until browned and allow some of the water to evaporate.
Step 3
Remove from the pan and put to the side.
Step 4
Add a slab of butter 1 tbsp of olive oil. Once melted add the onions and sweat down for 2 minutes. Add the garlic and re add the mince. Stir well and squeeze in the tomato paste. Mix in well and add the spices, tin tomatoes and water. Stir well and add the kidney beans. Then leave to simmer for 1 hour (or longer if you like: more time = more flavour)
Step 5
Peel and slice the potatoes into fries.
Step 6
Put onto boil in salted water and simmer for 3-4 minutes. Drain and leave to steam until dry.
Step 7
Add the canola oil to a larger sauce pan and bring up to 180/350f. Fry in batches in order to not over crowd the pan. Season with salt as soon as they come out of the oil.
Step 8
Prepare the garnishes, chop the coriander, chilli and grate the cheese.
Step 9
I like to stir some of the coriander & chilli through the chilli just before serving and save the rest to garnish.
Step 10
In a cast iron or oven proof dish, add the fries, top with the chilli, cream cheese, cheddar and place under the grill. Remove once golden brown and bubbling.
Step 11
Top with the garnishes and enjoy!
