For the Chicken Marinade:
500gchicken thighs boneless skinless
1 Tbspolive oil
1 tspsalt
1 tspgaram masala
1 tspturmeric
1 tspcumin seeds
freshly ground
1 tspkashmiri chilli powder
1 tspcoriander seeds
freshly ground
1 tspginger paste
1 tspgarlic paste
100gplain yogurt
For the Sauce:
1 Tbspvegetable oil
1 Tbspbutter
1cinnamon stick
1yellow onion
diced
1 tspginger paste
1 tspgarlic paste
1 tspsalt
1 tspgaram masala
1 tspturmeric
1 tspcumin seeds
freshly ground
1 tspkashmiri chilli powder
1 tspcoriander seeds
freshly ground
400gcan chopped tomatoes
1 handfulcashew nuts
200mldouble cream
For Garnish:

Step 1
Begin by marinating the chicken. Remove the bones and skin from the chicken thighs and cut them into bite-sized pieces.
Step 2
Transfer the chicken to a bowl and add all the ingredients for the chicken marinade. Mix thoroughly, cover with cling film, and allow the chicken to marinate for at least 30 minutes (or overnight in the refrigerator).
Step 3
Once the chicken is marinated, preheat the Cusimax smokeless grill to 200°C and lightly brush it with a bit of oil.
Step 4
Thread the marinated chicken onto skewers and grill until golden on all sides. Note that the chicken doesn't need to be fully cooked at this stage, as it will be finished in a pan later.
Step 5
Remove the chicken from the grill and set it aside.
Step 6
Meanwhile, let's prepare the sauce. Heat the oil and butter in a pan. Add the cinnamon stick and warm it for 1-2 minutes.
Step 7
Add the diced onion and cook for about 2 minutes until fragrant. Then add the ginger and garlic paste, along with all the spices. Mix well and cook for a few more minutes. Next, add the chopped tomatoes, cover with a lid, and cook for 8-10 minutes.
Step 8
Add the cashew nuts and double cream to the pan. Bring the mixture to a boil.
Step 9
Discard the cinnamon stick and transfer the sauce to a food processor or blender and blend until smooth.
Step 10
Return the blended sauce to the pan. Add the grilled chicken, mix well, and cook for an additional 10 minutes.
Step 11
When serving, drizzle more cream over the chicken and garnish with fresh coriander leaves.
