Butter Chicken is one of the most popular curries at any Indian restaurant . This aromatic creamy sauce with smoky flavoured chicken. Recently In a tiktok video I saw the trick to use tomato paste in the start of gravy like we did in gigi hadid viral pasta and unbelievably it gives that rich texture, colour and flavour to BUTTER CHICKEN. So tried it and shared my usual recipe with this tomato paste trick.

Instructions
Step 1
In a bowl add boneless chicken pieces.I used chicken thigh here.
Step 2
Add salt, kashmiri chilli powder, cumin powder, coriander powder, turmeric and garam masala.
Step 3
Crush garlic , ginger and green chillies and add in chicken.
Step 4
Add whisked yogurt, mustard oil, and lemon juice.
Step 5
Mix all the ingredients to coat the chicken well. You can grill straightaway or marinate for 30 minutes.
Step 6
Lined the baking tray with parchment paper and preheat oven at 180 c. Place marinated chicken on the tray and grill for 15 minutes.
Step 7
Heat up the oil and add cumin seeds.
Step 8
After cumin seeds splatter, add finely chopped onions and cook until sauté.
Step 9
Add ginger garlic paste and cook until fragrant.
Step 10
Add tomato paste and cook for few minutes. Cook until darken in colour and oil separates.
Step 11
Add kashmiri chilli powder, coriander powder, turmeric and salt.Cook for a minute.
Step 12
Add tomato puree and cook until sauce thickened.
Step 13
Smoke the cooked chicken for 5 minutes with live charcoal.
Step 14
Add cooked chicken in gravy and mix well.
Step 15
Cook further 5-6 minutes on medium flame.
Step 16
Add dried fenugreek leaves, garam masala and double cream.mix it well and cook for another 5 minutes. Adjust the seasoning at this point.
Step 17
Add butter for more creaminess. Give it a mix until melted. Drizzle cream on top , sprinkle chopped coriander and serve. Enjoy!
