Instructions

Step 1
Add all dry ingredients and the grated ginger to a large bowl and combine thoroughly.
Step 2
Preheat oven to 200c / 180c fan. Ready 6 or 8 cases on a baking tray (I prefer silicon moulds, much easier)
Step 3
Make a well in the centre of the dry ingredients and add all wet ingredients. Mix for a couple of minutes until we'll combined. (A balloon whisk makes short work of this)
Step 4
Transfer mix to 3/4 fill 6 muffin cases (For super explosive large ones!) or 2/3 fill 8 for slightly more controllable ones. (Reduce cooking time by 2 mins if going for 8).
Step 5
Bake in centre of oven for 20 mins (or until a sharp knife comes out clean)
