concentrated & tart
2 tablespoonvanilla extract

Instructions
Ice Cream Base
Step 1
Whip the egg yolks in a small bowl and set to the side
Step 2
Cook the milk, sugar, salt, & any necessary flavoring (refer to the flavoring guides) at medium heat in a large saucepan stirring constantly. It should steam but NOT boil.
Step 3
Once mixture is at 140-150 degrees F add the eggs and quickly stir them into the mixture. It is often easier to pour some of the mixture into the egg bowl and mix that first before returning it to the heated pan after mixing.
Step 4
Thoroughly whisk eggs into mixture, stirring until temperature of mixture is between 180 - 210 degrees F.
Step 5
Refrigerate until cool

Add the cream into the mixture
Flavoring - Chocolate

Thoroughly mix all ingredients into heated ice cream base to allow melting of ingredients.
Step 8
Allow to cool for several hours or overnight in the refrigerator.

Add ice cream base to ice cream mixture and mix as instructed by item.
Flavoring - Rocky Road
Step 10
Thoroughly mix cocoa powder, vanilla, & semisweet chocolate chunks/chips into heated ice cream base to allow melting of ingredients.
Step 11
Allow to cool for several hours in the refrigerator.

Combine in separate bowl chopped toasted almonds, mini marshmallows, and chopped/chipped milk chocolate.

Add ice cream base to ice cream mixture and mix as instructed by item.

Add chopped toasted almonds, mini marshmallows, and milk chocolate chunks/chips once ice cream has solidified somewhat, just before it is complete.
Flavoring - Cherry Chocolate Chip

Add the cherry juice and vanilla to the ice cream base

Allow to cool for several hours or overnight in the refrigerator.

Add ice cream base to ice cream mixture and mix as instructed by item.
Step 18
Add dark chocolate once ice cream has solidified somewhat, just before it is complete.
Flavoring - Coffee

Add the vanilla and whole coffee beans to the milk mixture before heating on the stove.
Step 20
Follow remainder of steps for ice cream base, keeping the whole coffee beans in the base mixture, and let cool overnight in the refrigerator, allowing the beans to continue to soak.

The next day remove the beans with a strainer

Add ice cream base to ice cream mixture and mix as instructed by item.
Flavoring - Mocha

Add all the ingredients to the completed mixture while still warm (or before the cream is added) and stir thoroughly.

Allow to cool for several hours or overnight in the refrigerator.

Flavoring - Strawberry Chocolate Chip
Step 26
Combine the strawberries and water in a pot and bring to boil. Mash the strawberries during the process. You are trying to make a paste with the fruit; think more tomato paste instead of sauce, but something in between is fine. The more liquid you remove the creamier, and less icy your ice cream will be.
Step 27
Boil away most of the water and combine this with the ice cream base, stirring thoroughly together.

Add vanilla and lemon juice to mixture

Allow to cool for several hours or overnight in the refrigerator.

Add ice cream base to ice cream mixture and mix as instructed by item.
