Instructions
Step 1
Layout bacon to roll.
Step 2
Cut 1/4” piece of cream cheese and cheddar and cut each in half.
Step 3
Put half of cream cheese and cheddar on the bacon, and roll. (Use toothpick to hold closed.)
Step 4
Repeat until all bacon is gone (typically will end up being 13-16 pieces).
Step 5
Take a pinch of pork sausage and and seal each end of the rolled bacon. If you end up with extra, just roll some meatballs!
Step 6
Smoke at 200°F for an hour or two and finish at 350°F to crisp up. (The oven is not recommended because these make a lot of grease!)
