Instructions

Step 1
1. Preheat the oven to fan forced 200°C/220°C/450°F/Gas mark 8.

2. Place half the cauliflower in a food processor and blitz to a rice consistency (or use a box grater). Set aside.

3. Place remaining cauliflower florets into a baking tray, toss with half the oil, season, and roast for 25

4. In a saucepan over medium heat, saute the onion in the remaining oil for a few minutes until so!ening -

remove from pan and set aside.
Step 7
5. Add the fish ( A note on the fish - you can use any smoked fish such as salmon, cod or haddock. As it's already smoked, i won't need a long time cooking. Place the whole fillet into the milk to cook - it will break up into chunks as you mix it through) into the same pan and cover with the milk. Simmer gently for 2-3 minutes before removing the fish (leave milk in the pan).

6. Add the cream cheese into the milk and whisk until smooth. Add the blitzed cauliflower and onion into the mix and simmer for a couple of minutes.

7. Add the parsley and fish back to the milk, stir through and adjust the seasoning to your liking.

8. Preheat the grill to high and remove the cauliflower from the oven. Pour the fish mix into an appropriate sized baking dish and top with the roasted cauliflower - top with the cheese and grill for 5-6 minutes until golden and bubbling.
