Instructions

Step 1
Cook the quinoa according package instructions.

Eggplant

Step 2
Slice the eggplant.
Step 3
Heat the oil in the pan. Leave the heat on medium high. Add the eggplant and season with half the seasoning. Fry for about 3-4min then flip.
Step 4
Again season the eggplants. Fry for another 3-4min until golden.

Wrap

Step 5
Slice the avocado.
Step 6
Spread the front center of the tortilla wrap with the tomato spread.
Step 7
Top it with the quinoa, eggplant and avocado.
Step 8
Drizzle on the lemon juice.
Step 9
Fold the sides of the wrap inward first. Then place the front part of the wrap over the filling and roll up under tension exercise.
Step 10
Roast the wraps on all sides. Enjoy!
