Chicken Biryani with Caramelised Onions

Instructions

Step 1
Make the biryani; finely slice the onions. Heat a large frying pan with 1 tsp oil on medium-high heat. Add half the onions, garlic paste, ginger paste, raisins, whole tomatoes, cashews, chicken and two-thirds of the tikka paste to the pan. Cook for 6-8 mins, until softening.
Step 2
Make the caramelised onions; heat a medium saucepan with 1 tsp oil on medium-high heat. Add the remaining onions, remaining tikka paste and half the honey to the pan. Cook for 8-10 mins, until soft and jammy.
Step 3
Add the rice and 100ml water (50ml for 1 person) to the chicken frying pan. Break it up with a wooden spoon and cook for another 2-3 mins, until the chicken is cooked.
Step 4
Roughly chop the coriander. Stir it into the rice along with the peas in the final minute of cooking. Season with sea salt to taste.
Step 5
Check your chicken is cooked through by cutting a large piece in half; the flesh should be white and the juices running clear. Cook for longer if necessary.
Step 6
Serve the biryani topped with the caramelised onion.
