1 x 12 ozroasted red pepper
1 x 14 ozbutter beans
can, or cannellini beans
3 cupsfresh spinach
roughly chopped
¼ cupyellow onion
diced
2 clovesfresh garlic
chopped
4 Tbsptomato paste
1 Tbsppesto
¼ cuplemon juice
¼ cupsour cream
½ cupwater
¼ tspcayenne pepper
salt
to taste
pepper
to taste
¼ cupparsley
chopped
2 Tbspolive oil
Instructions
Step 1
Blend together roasted red pepper, tomato paste, lemon juice, sour cream, and seasonings. Sautee onions and garlic in a large skillet until softened, add beans (drained) and spinach. Combine with sauce in a shallow pan and cook at 375F for 30 minutes, or simmer on low for 30 minutes on stovetop. Garnish with olive oil and parsley.
