Instructions
Step 1
Peel and grate garlic clove and grate the cheese.
Step 2
Add yoghurt, mayo, lemon juice, garlic and ~¾ of the grated cheese in a large mixing bowl.
Step 3
Whisk with 2-3 tbsp water and black pepper to make smooth dressing.
Step 4
Add the kale and scrunch the leaves with hands to tenderise.
Step 5
Set aside to marinate for 20 minutes.
Step 6
Set a large frying pan over medium-high heat and add bacon lardons.
Step 7
Fry for 8-10 mins until golden and crisp.
Step 8
Chop pepper into small pieces.
Step 9
Dry lardons on kitchen paper.
Step 10
Pile the marinated kale onto a plate and scatter with remaining cheese.
Step 11
Top with the lardons, chopped pepper, croutons and grinding of black pepper.
