Healthier Chicken Schnitzel Sando

Crispy crumbed chicken sandwich - ready in under an hour and great to feed the whole family! If you have frozen or ready made schnitzels then even better! Perfect for a weekend lunch or even to pack in the kids lunch boxes - I like to serve these at kids birthday parties as they are great make ahead sandwiches!

Instructions

Step 1
Preheat oven to 200 degrees fan forced. While this is pre heating, line a baking tray with baking paper

Meanwhile setup crumbing station. One bowl with the flour, one bowl with the egg and one with the panko. Season the panko with salt, pepper and the tarragon. Mix together

Step 3
To crumb the schnitzels, place chicken in the flour and dust lightly, then using one hand place in your egg mixture. Toss in the egg then use your other hand to transfer to the panko. Cover in the panko then place on the baking tray. Repeat this step for the rest of the chicken.
Step 4
Spray the chicken with oil of your choice then bake for 10 minutes on each side (spraying the other side when you flip).
Step 5
To assemble the sandwiches, spread mayo on both sides of the bread, add chicken to the bottom slice followed by a slice of cheese. Top with shredded lettuce and the top of the bread!
