Easy and delicious! I started making this recipe when we thought one of our children had a dairy allergy. We are no longer dairy free and still use this recipe because we prefer it!

Instructions

Step 1
Cover potatoes with cold water in a large pot and add 1 teaspoon of salt. Bring to a boil and cook for 15 minutes or until just tender.
Step 2
Drain potatoes and mash with ¾ cup broth, 3 tablespoons oil, 1½ teaspoons salt and several grinds of black pepper, to taste.
