Focaccia Sourdough Discard

Instructions

Step 1
Leave the discard in room temperature for 1-2 hours if using cold discard from fridge. You can mix it with the 200 grams of water to warm it up faster
Step 2
Mix in together the rest of the ingredients to make the dough. Folding the dough to build gluten strengrh every 30-60 min, 3x.
Step 3
Allow the dough to ferment for a total of 8-9 hours in room temperature.
Step 4
When the dough is ready, move it to the baking pan and let it rest spread to fill the edges of the pan. Preheat oven to 200c.
Step 5
Sprinkle the chedder cubes all over and make dimples with fingers. Pour evoo on the cheedar and dimples dough.
Step 6
Bake for 10-15 minutes untuk golden brown and crispy. After baking, sprinkle in black pepper and salt while hot. Then the prepared dill.
Step 7
Store in air tight container in the freezer.
