Open Faced Smashed Chickpea Avocado Melt
Elevated chickpea salad & with melted vegan mozzarella cheese on a slice of crispy sourdough. How does that sound? Pretty perfect imo

Ingredients
3 servings
1chickpeas can
rinsed & dried
1red onion
small finely diced
¼ cupfresh herbs
finely chopped, i used parsley & dill
3 tvegan mayo
or sub 1 1/2 t of the mayo for unsweetened non dairy yogurt
1 tsweet pickle relish
1mini cucumber
finely diced
1garlic clove
grated
2 tspred wine vinegar
2 tspdijon mustard
kosher salt
pepper
to taste
1🌱 sandwich
1sourdough slice
toasted
1avocado
1/2 sliced
2 slicestomato
vegan mozzarella
sliced extra thin mdrizzle extra herbs
olive oil
Instructions
Step 1
🌱In a mixing bowl, mash chickpeas till flakey using a potato masher/back of fork
Step 2
🌱In a small dish grate garlic into vinegar. Let sit 2 min
Step 3
🌱meanwhile combine the rest of ingredients, and garlic/vinegar, salt/pepper to taste
Step 4
🌱Brush bread with olive oil, toast till golden
Step 5
🌱construct sandwich: layer sourdough with sliced avocado, tomato, & vegan mozzarella.
Step 6
🌱Bake at low heat in oven/toaster oven till cheese melts.
Step 7
🌱Put under broiler - 1-2 min for cheese to brown & extra crispiness. Enjoy!
