Honey Chicken Breasts

Heat a large non-stick pan over medium-high heat. While the pan heats, pat chicken dry with paper towels. Season with salt and pepper. When the pan is hot, add 1 tsp oil, then chicken. Pan-fry until golden, 2-3 min per side. Transfer chicken to an unlined baking sheet. Roast in the middle of the oven until cooked through (10-12 min, 165 °F internal temp).
Make sauce

Whisk together honey, soy sauce, cornstarch and 2/3 cup water in a medium bowl. While chicken roasts, add honey mixture to the same pan. Bring to a boil over medium-high. Once boiling, cook, stirring often, until sauce thickens slightly, 2-3 min.
Finish and serve
Step 4

When chicken is done, transfer to a cutting board and let rest for 3-5 min. Thinly slice chicken, divide between plates, and top with sauce.
