Instructions
Step 1
Add butter to pot and consistency stir on med till dark amber. Set to cool in fridge
Step 2
Add slices onions to pot with wine, peppercorn, thyme, peel, coriander seeds, wwv, garlic
Step 3
Let liquid reduce to 80%
Step 4
Strain
Step 5
Pour 100g into pot, add cream and salt
Step 6
Bring to boil then turn off heat
Step 7
Add 200g of butter while stiring peice by peice
Step 8
Add chive, konbu
