Instructions
Step 1
With the help of a potato peeler, slice your zucchini into thin slices, place them on a plate, cover with paper towel and pat them dry.



Step 2
In the meantime, in a food processor, mix your fresh spinach with ricotta and 80g of your grated Parmesan cheese until smooth.




Step 3
Place one layer of zucchini slices on a baking dish previously lined with parchment paper, cover with a couple of tablespoons of your green ricotta mix and some grated mozzarella and continue until you finish all the ingredients.


Step 4
Brush the last layer of zucchini with some olive oil, cover with grated mozzarella and your remaining 20g of grated Parmesan and bake for 25-30 mins (180C). Buon appetito!
