Step 1
Cook the penne While it is cooking, finely dice the shallot Put the olive oil and butter into a saucepan. Once the butter is melted, add the shallot. Cook until it’s soft. Then add the garlic. Cook for about 30 seconds. Add the vodka and bring to a boil for a few minutes. Remove from heat and whisk in the tomato paste until it’s smooth. Add it back to the heat and whisk in the heavy cream. Put it on low heat and simmer until it thickens up, whisking often. Remove from the heat. Let it cool a minute, then whisk in some Parmesan cheese. Add a little salt and pepper. Then pour it over the cooked pasta. Sprinkle more Parmesan on it.
