Gammon Steaks with a Warm Potato and Broccoli Salad

Instructions
Step 1
Heat a pan of water to boiling.
Step 2
Add the potatoes and simmer for 15 minutes. Add the broccoli and cook for a further 2 minutes. Drain and set aside.
Step 3
Mix together the mayo, olive oil, lemon juice, mustard and a good pinch of salt and pepper.
Step 4
Add the potatoes back to dry pan or a bowl. Add the mayo mixture and give it a good toss so they potatoes are coated.
Step 5
Add the broccoli, chives, gherkins and spring onions, give it a light toss. Place lid on to keep warm.
Step 6
Heat a frying pan with a spray of oil until hot. Cook the gammon for 2 minutes on each side. Serve with the potato salad. Enjoy 😊
