Instructions

Step 1
Heat oil in a pot over medium heat.
Step 2
Add onion and cook, stirring often until softened but not browned, then cook for 2 minutes.
Step 3
Add 2 cups of the stock and bring to a boil.
Step 4
Add peas, reduce heat, and simmer gently until tender, about 5 minutes for fresh peas, about 2 minutes for frozen.
Step 5
Remove pot from the heat. Add parsley, lettuce, and remaining 2 cups of stock to the pot.
Step 6
Purée soup until smooth and season with salt and pepper.
Step 7
Serve with olive oil and yoghurt.
