Instructions
Step 1
Peel and dice sweet potatoes into half inch pieces.
Step 2
Play sweet potatoes in the medium pot with enough salted water to cover by 2 in. Cover, bring to a boil, and cook until tender, 15 to 20 minutes. Drain and return sweet potatoes to pot and add sour cream and 1tbsp butter and mash until smooth. Season with salt and pepper.
Step 3
Place 4tbsp of butter in a bowl and microwave until melted. Stir in honey and a pinch of salt.
Step 4
Season pork chops lightly with salt and pepper and rub all over with barbecue seasoning. Cook pork over medium high heat until browned and cook through, 4 to 6 minutes per side.
Step 5
Steam green beans in a pot with a splash of water until tender, 5 to 7 minutes. Add some lemon zest, 1tbsp butter, a squeeze of lemon juice, and a big pinch of salt and pepper.
