Instructions

Step 1
Adjust rack to middle position and preheat oven to 400ยฐ F. Bring a large pot of water to boil. Have the bell pepper come over move stem and seeds. Peel and thinly sliced garlic. Zest and quarter lemon.
Step 2
Place bell pepper on a baking sheet. Drizzle with olive oil in season with salt and pepper. Arrange cut sides down. Roast on middle rack until softened and lightly charred, 20 to 25 minutes. Thinly slice into strips.
Step 3
While bell peppers roasting, add ravioli to pot of boiling water. Reduce to a summer and cook for specified amount of time on package. Reserve half cup pasta water and drain.
Step 4
Heat a drizzle of oil in a large pan over medium heat. Add garlic and cook until softened. Ad stock concentrate, cream cheese, sour cream, half of the parmesan, 1/4c reserve pasta cooking water and 2tbsp of butter to pan with garlic. Whisk until combined and creamy then stir in bell pepper. Add a squeeze of lemon juice to taste and season with salt and pepper.
Step 5
Add ravioli to pan with sauce and toss until coated and then plate.
