1 lb/7 Lean Ground Beef

1 ½ cupsWhite Rice
dry
1 ½ cupsFat Shredded Cheese
Reduced

15 ozcan black beans
drained and rinsed

15 ozcan Diced Tomatoes
with the juice

1yellow onion
small, chopped

1 ozTaco Seasoning
pack
6 TbspTortilla Strips

½ Tbspgarlic powder

1 tspground coriander

salt
to taste

to taste
Instructions
Step 1
Start by cooking your rice using your preferred method. When it's done, set it aside.
Step 2
While your rice is cooking, place a large skillet over medium-high heat and add in your ground beef. Break it up a little and immediately add in your chopped onion. Let this continue to cook until your beef is no longer pink, breaking it up in the process.
Step 3
Once your beef is cooked through, add in your packet of taco seasoning, 1/2 Tbsp garlic powder, 1 tsp ground coriander, your can of drained black beans, and your can of diced tomatoes with the juice. Mix everything together, reduce the heat to low, and let this simmer for five minutes.
Step 4
When that's done give it a taste and add salt and pepper to preference.
Step 5
Portion your rice and beef out into your meal containers and top each meal with 1/4 cup of cheese and 1 Tbsp of tortilla strips.
