Step 1
On a rimmed baking sheet, toss tomatoes with 1 tbsp. oil and garlic. Roast at 275 ºF (135 ºC) for 2 hours. Toast breadcrumbs with ½ tbsp. oil until golden brown. Let cool and mix in Parmesan, then set aside. Remove skins from garlic and sauté in a large pan over high heat with 1 tbsp. oil, half of tomatoes and anchovies. Break up any large chunks to make a quick sauce, and reduce to simmer. Meanwhile, cook spaghetti to al dente. Toss into sauce along with basil to coat. Serve topped with panko Parmesan mix and pepper to taste.
