Instructions

For the Chicken Satay:

Step 1
Prepare the Marinade: In a bowl, whisk together the soy sauce, brown sugar, curry powder, and ground ginger.
Step 2
Marinate the Chicken: Place the chicken strips or skewer-sized pieces in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or preferably a few hours, to allow the flavors to meld.
Step 3
Thread the Chicken: If using wooden skewers, thread the marinated chicken onto the soaked skewers.
Step 4
Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Grill the chicken skewers for about 2-3 minutes per side or until fully cooked and slightly charred. The internal temperature should reach 165°F (74°C).

For the Peanut Sauce:

Step 5
Mix Ingredients: In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, ground ginger, and garlic powder. Add warm water gradually to achieve your desired sauce consistency. Adjust the amount of water as needed.
Step 6
Serve: Serve the grilled chicken satay with the peanut sauce for dipping. Garnish with chopped cilantro, crushed peanuts (if desired), and lime wedges.
