This dish was a lot of fun to make and so delicious. A nice healthy alternative if you are looking and are filled with tender ground turkey, rice, and veggies. They are perfect for meal prepping too!

Step 1
Preheat oven to 375 degrees.
Step 2
Trim the bell peppers by removing the seeds and core.
Step 3
In a pan, preheated with oil over medium-heat, saute the onions they turn golden brown. Add the ground turkey, breaking up the meat with your spatula as you brown it.

Step 4
Add in cooked rice and half of the sauce. Stir to combine and season with salt and pepper to taste.
Step 5
Stuff each pepper with the filling. Add the rest of the sauce to the bottom of the baking dish. Place peppers into the baking dish and top each one with mozzarella cheese.
Step 6
Bake at 375°F for 40 minutes. Garnish with some parsley if you're feeling fancy and enjoy!
