Ingredients

For the pastry crust
3 ½ cupall-purpose flour
1 pinchsalt
1 cupunsalted butter
2 teaspoonsgranulated sugar
⅔ cupwater
or more if needed
For the filling
8 cupsapples
peeled, sliced
2 tablespoonslemon juice
lemon zest
¾ cupsugar
2 tablespoonsall-purpose flour
2 tablespoonscornstarch
¼ teaspoonsalt
¼ teaspoonall spice
1 teaspooncinnamon
¼ teaspoonnutmeg
¼ cupcider
boiled, or apple juice
2 Tablespoonsbutter
diced into small pieces
1 ½ tspbutter

Instructions
Dough
Step 1
In a medium-sized bowl, mix together the flour and salt.
Step 2
Dice the butter into small pieces the size of peas. Add slowly to the mixture and mix until small pea-sized crumbs are formed.
Step 3
Add sugar and stir the mixture well.
Step 4
Pour in the ice cold water, little at a time, while mixing it.
Step 5
After a while, switch to mixing by hand, and finally form the dough into the shape of a ball.
Step 6
Flatten the dough a little bit, wrap into cling film and chill in the refrigerator for about 30 minutes.
Step 7
Preheat the oven to 190°C (375°F).
Filling
Step 8
In a small bowl, combine together sugar, flour, cornstarch, salt and spices.
Step 9
In a large mixing bowl, combine the slice apples with lemon juice and zests.
Step 10
Sprinkle the spice mixture over the apples, and stir to coat them.
Step 11
Stir in the boiled cider or apple juice and let sit for about 20 minutes.
Making the pie
Step 12
Lightly grease a 23cm (9") deep pie dish (at least 5cm/2") deep.
Step 13
Dice some butter into small pieces.
Step 14
Divide the dough into 2 pieces, one about twice as large as the other. Store the small piece in the fridge.
Step 15
Roll the large piece into approximately a 33cm (13") circle and transfer into a pan. Trim the edges so that they overlap the rim of the pan all the way around.
Step 16
Spoon the apple filling into the pan, and top with diced butter.
Making the lattice pie crust
Step 17
Roll out the remaining dough to a 11-inch (28 cm) circle, and slice it into thin layers. Weave a lattice crust for the lop layer, and crimp the edges of the pie with a fork.
Step 18
Whisk one egg with one tablespoon of water and brush it on the top crust and around the edges of the pie.
Step 19
Sprinkle some additional sugar over to add shimmer and a sweet crunch to every slice.
It's time to bake it!
Step 20
Cover the edges of the pie with foil to avoid burning the edges.
Step 21
Bake the pie for about 50 minutes, until the filling starts bubbling inside the pie. When the pie is ready, remove it from the oven and let cool completely before slicing
