Ingredients

1 poundlean ground beef
2red bell pepper
medium, chopped
2onions
medium, chopped
1zucchini
medium, chopped
2 cupswater
6 ozdried elbow macaroni
1 cupcorn
frozen, whole
½ tablespoondried oregano
¼ cupno salt added ketchup
½ tablespoonbalsamic vinegar
1 teaspoonground cumin
¾ teaspoonsalt
⅛ teaspooncrushed red pepper flakes
Instructions
Step 1
Heat a Dutch oven over medium-high heat. Remove from the heat and lightly spray with vegetable oil spray (being careful not to spray near a gas flame). Cook the beef for 8 to 10 minutes, or until browned, stirring occasionally. Pour into a colander and rinse under hot water to remove excess fat. Drain well. Set aside. Wipe the Dutch oven with a paper towel. Lightly spray with vegetable oil spray. Cook the peppers, onions, and zucchini for 3 to 4 minutes, or until the onions are translucent, stirring occasionally. Stir in the water, macaroni, corn, and oregano. Increase the heat to high. Bring to a boil. Reduce the heat and simmer, covered, for 10 minutes, or until the pasta is tender. Remove from the heat.
Step 2
Stir in the beef and the remaining ingredients. Let stand for 5 minutes to absorb flavors
