Step 1
1. Boil a pan of salted water and cook the pasta according to the pasta instructions. Meanwhile heat the oil in a pan and fry the garlic and shallot until soft.
Step 2
2. Add the mushrooms and fry over a high heat until they just give up their juices. Add the wine and rosemary and cook until the wine has reduced (about 5 minutes).
Step 3
3. Add half the mascarpone and stir until melted. Add the spinach and turn it over in the juices until wilted. Season with the salt and pepper. Just before serving swirl the remaining mascarpone into the pan.
Step 4
4. Drain the pasta and serve with the sauce.
