A 20 minute homemade flatbread recipe that uses only 4 ingredients - perfect for dipping.

Ingredients
4 servings
200gunsweetened yoghurt
oatly or alpro
230gself-raising flour
more for dusting
1 tspbaking powder
1 Tbspolive oil
Salt
Pepper
100gplant butter
2garlic cloves
fresh parsley
1 Tbspsmoked paprika
4 Tbspmutabal

Instructions
Step 1
Into a mixing bowl, add the flour, yoghurt, baking powder, olive oil, 1/2 tsp of salt + pepper. Work into a roughly formed dough with a spoon.
Step 2
Dust a clean work surface with some flour, and tip out the dough.
Step 3
Gently knead until it comes together into a smooth ball (this ALWAYS takes me longer than I think - don’t be afraid to add a little more flour too).
Step 4
Divide the dough into 4 portions, then dust the surface with more flour.
Step 5
Roll them out until they are 0.5cm thick, then heat up a frying pan to medium high.
Step 6
Once hot, add the flatbread, and cook for 2-3 minutes on each side.
Step 7
There should be large brown spots forming. Repeat for 4 flatbreads.
Step 8
To make the butter, mix a large knob of vegan butter with 2x minced garlic cloves, 1tbsp smoked paprika + a handful of chopped parsley.
Step 9
Melt a small knob of the butter in a pan, then place the flatbreads in the butter to coat on either side.
Step 10
Load the flatbreads with mutabal, shirazi salad, pomegranate seeds + fresh mint - enjoy!
