No-Yeast Stovetop Flatbreads

These stove-top flatbreads are super quick to make and no-bake! They use baking powder, no yeast, so the dough doesn't need to rise before you can use it.

Instructions

In a medium bowl, mix the flour, baking powder and salt. Make a hole in the centre of the dry ingredients and pour in the water, yogurt and olive oil. Mix to form a smooth door, adding 1-2 tbsp more water if needed.

Tip the dough out onto a lightly floured surface and knead for a few minutes. Return to the bowl, cover with a clean cloth and let rest for 15-30 minutes (this helps the dough become more elastic).

Divide the dough into 6 equal pieces, roll into balls, then roll each ball out into a circle around 4mm thick.

Heat a dry frying pan (something heavy like cast iron works best but use what you've got!) over the highest heat on the stove. Once the pan is HOT add your first circle of dough to the pan. Let cook until browned underneath (1-3 minutes). Flip and let the other side cook until browned (this will take less time than the first side did). Transfer to a plate and keep the cooked flatbreads wrapped in a clean cloth, this will keep them soft & warm!
