Instructions

Step 1
Prepare the Thai Chicken Filling:

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

Add the finely chopped onion, minced garlic, and grated ginger. Sauté for about 2-3 minutes until fragrant.

Add the ground chicken to the skillet and cook, breaking it apart with a spatula, for about 5-7 minutes or until it's cooked through and no longer pink.

Stir in the finely chopped red bell pepper and shredded carrots. Cook for an additional 2-3 minutes until the vegetables are tender.

Drizzle the low-sodium soy sauce and lime juice over the chicken mixture. Stir to combine and cook for another 1-2 minutes.

Remove the skillet from the heat and stir in the chopped fresh cilantro. Season with salt and black pepper to taste.

Assemble the Lettuce Wraps:

Take a large lettuce leaf, spoon a portion of the Thai chicken filling into the center.

Garnish with sliced cucumber, red onion, chopped fresh cilantro, and a squeeze of lime juice.
