Instructions
Step 1
Peel potatoes, chop and set aside
Step 2
Cut bacon and cook in a large pot. Remove and add garlic and scallions and flour to make a roux. Add butter is mixture is too thick/lumpy.
Step 3
Once flour is cooked through, add broth slowly, mixing continuously until flour is completely dissolved. Add cream and mix, mixing thoroughly. Add seasoning and stir again.
Step 4
Add potatoes and cook on medium for 20 minutes or until potatoes are fork tender.
Step 5
Add cheese and simmer for 5 minutes, or until cheese is melted.
Step 6
Serve with bacon topping, cheese, scallions, and sour cream.
