Smoked salmon, grilled zucchini hummus plate
Okay I accidentally created a masterpiece last night when I was throwing together random stuff in my fridge and I had to remake it again so I could film it and write up a recipe!!
Once the zucchini and carrot is grilled and your egg is boiled the plate comes together super quickly. You can also swap the zucchini and carrot for whatever veggies you like. And you could swap hummus for tzatziki or any one of your fave dips.
The perfect lil snacky plate dinner!!
Ps the @pilpel hummous is elite and is my fave hummus to have with smoked salmon.

Step 1
Score the zucchini and carrot, season with salt and pepper and bring a pan to medium high heat with some olive oil
Step 2
First add the carrot, scored side down with the lid on the pan for 5 - 7 minutes then flip over the carrot, add the zucchini and grill for a further 5 - 7 minutes, lid on, on high until zucchini is nice and browned
Step 3
Before you turn off the pan, grill your sourdough in it too
Step 4
Prepare you plate with the hummous first, then the grilled veggies, salmon, egg, salt, pepper, extra drizzle of olive oil as well as the parsley, lemon zest and lemon juice. Enjoy!!
