Salmon Rice Paper Rolls & Spicy Tahini Sauce

Fresh and simple rice paper rolls and a seriously delicious spicy tahini dipping sauce. The perfect low carb Summer appetiser, snack or lunch. The process of making these is so therapeutic, I love to get in the zone while listening to a podcast.

Ingredients
2 servings
8rice paper rounds
200ghot smoked salmon
1cucumber
finely sliced
1 cupscabbage
shredded
¼ cupbean sprouts
4spring onions
chopped
Spicy Tahini Sauce
Instructions
Step 1
Set up a station with all of your fillings ready, and fill a plate that is larger than the rice paper round with warm water. You’ll need a plate with a slightly lipped edge but only about ½ cm of water is needed.
Step 2
Slide the rice paper round, smooth side down, into the plate and submerge it in the water. Leave it submerged for 5-8 seconds, until soft and malleable, then pull it out and carefully place on a chopping board or smooth surface.
Step 3
Place all of your fillings in the shape of a small rectangle in the centre of the round, then carefully roll them up. Pull one side completely over the other, enclosing the filling and ensuring it is tightly enclosed. Pull in the other sides, then continue to roll it over itself until it is a neat(ish) package. Continue until you have run out of filling.
Step 4
To make the dipping sauce, combine all ingredients in a small bowl and stir to combine.
Step 5
Serve your rice paper rolls with dipping sauce.
