Ingredients

2 clovesgarlic

4curry leaves

3 Tbspcurry powder

200gall purpose flour

100mlwater

60mlvegetable oil

Instructions
Step 1
heat oil in a pan and sautee garlic, onion and curry leaves
Step 2
Mix curry powder with 5 tbsp water to make a paste. Add it on to the sauteed aromatics
Step 3
add in potatoes and followed by some water
Step 4
turn to low heat, cover and let it simmer till potatoes are soft. Stir occasionally to ensure the bottom doesnt burn
Step 5
add salt and mushroom seasoning. Stir well. Keep it aside to let it cool before using
Step 6
Water Dough: Combine 1 tbsp caster / brown sugar and 200g all purpose flour Add 100ml water, 60ml vegetable oil. combine until dough is formed. Cover and let it rest for 10-30mins
Step 7
Oil Dough: 100g room temp salted butter and 160g all purpose flour. Mix until dough forms. Cover and let it rest for 10-30mins
Step 8
Get Water dough: divide into 20 equal portions, around 18g each. Shape it into a ball
Step 9
Get Oil dough: divide into 20 equal portions, around 13g each. Shape it into a ball
Step 10
Flatten the water dough. wrap water dough around the oil dough
Step 11
1st rolling: flatten the combined dough. roll it into a small log 2nd rolling: flatten the combined dough again. roll it into a small log Flatten into a disc about 10cm or 4inch diameter using the 4inch cutting ring as a sizing reference
Step 12
Put 40g potato filling and seal and crimp the sides of the dough. Place it on a lined baking sheet tray
Step 13
Prepare egg wash: combine 1 egg and 1 tsp water
Step 14
Brush the dough with egg wash
Step 15
bake for about 20-25 mins n a preheated oven at 190C (top and bottom heat)
