Instructions

Step 1
Drain and Rinse Chickpeas
Step 2
Cut zucchini info 1/2 inch rounds

Quarter Lemons
Step 4
Halve the tomatoes

Halve cucumber
Step 6
In a bowl combine halved tomatoes ,sliced cucumber,juice of 2 lemon wedges garlic paste and olive oil . Season with salt and pepper and stir to combine and keep aside for 10 mins

Cook couscous in a boiling water pot for 5 to 7 mins

In a medium pan ,heat oil ,cook drained chickpeas for 5 to 7 mins

Add garlic ,red pepper flakes and cook with stirring . Turn off heat and add lemon

In same pan ,cook the zucchini rounds until browned on both ends for 3 to 4 mins

To the pot of cooked couscous add the feta crumbled ,marinated tomatoes and cucumber . Drizzle with oil and stir to combine
Step 12
Serve finished couscous with cooked zucchini ,cooked chickpeas and tzatiki
