Step 1
In the bowl of an electric mixer. combine water and yeast. Add sugar, 6.5 c flour, olive oil, and salt; knead until a smooth dough forms. Gradually add in remaining flour, until dough feels just a little sticky.
Place dough into a greased bowl; turn the dough over in the bowl so it is
greased all around. Cover with a clean towel or plastic wrap; let rise at least 3 hours (up to 5 hours). Preheat oven to 475°F.
