Instructions

Step 1
1. Slice vegetables.

2. In a bowl add 1/2 cup egg whites and 1 egg. Add seasonings to taste.

3. Grease a pan with avocado oil spray and add onions and jalapeños. Cook for 2 minutes.

4. Add calabacitas and cook for 3 minutes.

5. Add tomatoes and cook for 3 minutes.

6. Add egg mixture and combine until eggs are cooked through.
Step 7
7. Serve with sides of choice: low carb tortillas and 28 grams of queso fresco.
