Instructions
Step 1
On medium heat, fry onions and garlic for 2 minutes. Fry carrots, zucchini, and eggplant for 5 mins.
Step 2
Add rest of the ingredients except the parmesan cheese. Bring to a boil and break up tomatoes. Turn on low cover, and cook for 45 mins, until barley is cooked
Step 3
Serve with pesto and parmesan.
