The Secret to Make Flaky Empanada Dough

Instructions

Step 1
On your working bench put 1st class bread four. Make a well, add sugar, salt, room temp unsalted butter, 1 egg. At this point you can add a portion of the water. Gradually add the water as needed bec this will depend on the water absorption of your flour. Mix all ingredients together, start by breaking down the butter then slowly incorporating the flour until the dough is formed.
Step 2
Cover with plastic and let it rest for 15mins. Note: its better to use plastic than cloth. Set aside Letting it rest will help absorb all the liquid making it more pliable
Step 3
Make the sue paste/ "panit" (i think this is the oil dough: Mix together 3rd class bread flour and shortening. Note that the consistency is kind of powdery. Just continue mixing together, do this until you can form a smooth dough. Forming the dough will require you by compacting the dough. Cover with plastic and let it rest for 15mins
Step 4
After 15mins, get the 1st dough. Flatten it out to 1/4 inch thickness with the rolling pin. At this point the dough is kind of hard. this is fine so that it can better hold the sue paste/ "panit"
Step 5
On top of the 1st flattened dough. start spreading the prepared sue paste/ "panit". Spread it evenly on the bottom half of the 1st dough.
Step 6
Once you have spread the sue paste, do a book fold (fold upper portion of the 1st dough, then the lower portion of the dough). by this time it should be on a rectangular shape. Roll/ flatten it again once, turn the dough seam side down. Cover with cling wrap and let it rest for 15mins so that its easier to shape the dough later on
Step 7
Flatten the dough into 1/4 thickness. At this point the dough is uch more pliable bec of the resting.
Step 8
Roll the dough into 2 logs. Portion the dough 40g to 70g each depending on the size of empanada you want to make
Step 9
Assempble: Flatten the portioned dough into circles, put your desired filling. In this video they used ube and cheese. Fold to close the dough and crimp the sides of the empanada. Fry the empanada for about 5-7mins until golden brown
